Sweet Chilli Chicken Stir Fry

Ingredients

  • 375g hokkien noodles
  • 3 chicken breast fillets
  • 2 tablespoons sweet chilli sauce
  • 2 teaspoons fish sauce
  • 1 tablespoon oil
  • 80g Snow Peas
  • 80g Carrots
  • 50g Sprouts
  • 1/2 Yellow Capsicum 
  • 80g baby Sweet Corn, halved lengthways

Preparation time:  10 minutes
Total cooking time:  10 minutes
Serves:  6

Step 1

Place the noodles in a large bowl, cover with boiling water and gently break apart with a fork.  Leave for 5 minutes then drain

Step 2 

Combine the chicken, sweet chilli sauce and fish sauce in a bowl

Step 3 

Heat a wok or frying pan over high heat, add the oil and swirl to coat.  Add the chicken pieces and then stir-fry for 3-5 minutes or until cooked through.  Then add the corn, carrots, sprouts, capsicum and snow peas and stir-fry for 2 minutes.  Add the noodles and serve.
